Jalapeño cheese croquettes

Treat yourself to a crunchy treat with these homemade jalapeño cheese croquettes! With a surprising mix of spicy jalapeños and creamy cheddar cheese, covered with a crispy crust of corn tortilla chips. Prepare them in your air fryer for a healthier option without sacrificing taste. Perfect as a snack or side dish!

For the croquettes:

  • 3 cups of mashed potatoes
  • 2 tbsp sour cream
  • 1 large egg
  • 1.5 tsp kosher salt
  • 1.5 tsp pepper
  • span style="color:#0d0d0d"> 1.5 cup grated cheddar cheese
  • ⅓ cup chopped jalapeños
  • 2 tbsp chopped chives
  • Oil for frying (preferably rapeseed oil)

For breading:

  • ¾ cup ground corn tortilla chips
  • ¼ cup breadcrumbs
  • ½ tsp
  • 2 large eggs
  • 3 tbsp milk
  • ⅓ cup flour
  • Salt and pepper to taste

Preparation method:

1. In a large bowl, mix mashed potatoes, sour cream, egg, salt and pepper until well combined. Add cheddar cheese, jalapeño and chives.

2. Form the mixture into elongated oval croquettes and place them in the refrigerator for at least 20 minutes.

3. First roll the croquettes in flour, then in egg white and finally in a mixture of breadcrumbs and ground tortilla chips. Press gently to cover completely.

4. Preheat the air fryer to 160°C. Fry for 3-4 minutes until golden brown and crispy.

5. Serve the crispy jalapeño-cheddar croquettes immediately and enjoy the delicious taste!
