Easy crispy Hoisin pork belly

Ingredients:

  • 600 g boneless pork belly
  • 2 tablespoons Hoisin sauce
  • 1 teaspoon Chinese 5 herbs
  • 1 tbsp white wine vinegar
  • Salt, pepper and oil, if desired


Instructions:

1. Poke holes in the skin of the pork (make sure you don't go too deep into the fat) and make whole many small pricks, then pat the skin dry and divide the abdomen into two rectangular pieces.

2. Turn the pork belly and score the pork at 1cm intervals. Sprinkle the 5 spices and a pinch of pepper over the pork and then rub the Hoisin sauce into the pork.

3. Place the pork pieces on a piece of foil, skin side up, and fold it to form a tight-fitting container, leaving the skin visible. Brush the skin with vinegar and then cover the pork skin with a layer of fine sea salt, 1 mm thick.

4. Roast the pork belly in the air fryer at 170°C for 30 minutes. Once the time is up, open the basket and scrape the salt layer from the pork skin.

5. Brush the skin with oil and then fry for another 20-30 minutes at 200°C until the skin puffs and crackles. Then cut into slices and serve.
