Harissa chicken recipe


Give your family a Spanish getaway with these Instant Pot Harissa Chicken Thighs ! This dish serves 4 people and is ready in less than 40 minutes. A perfect weeknight meal! Tender chicken thighs marinated in a spicy mix of harissa, lemon and honey then cooked with baby potatoes, peppers and chorizo ​​for a burst of delicious flavour. Top it off with spiced yogurt, olives and fresh dill for a complete culinary adventure.

Ingredients:

  • 4-5 chicken thighs
  • 500 grams of new potatoes
  • 3 peppers, cut into quarters
  • 120 g yoghurt
  • 0"> 225 g chorizo, cut into pieces

Marinade

  • 75 g yoghurt
  • 2 tbsp harissa
  • 1 lemon, zest and juice
  • 1 tbsp honey
  • Salt and pepper to taste

Herb mix

  • 4 tablespoons oil of your choice
  • Generous pinch of salt and pepper
  • 1 tablespoon of your favorite Middle Eastern-style spice blend
  • 2 tablespoons Harissa

  • 160 g olives
  • tzatziki
  • Chopped fresh dill, optional

Instructions:

="font-weight:400"> 1. Add your potatoes to your Instant Pot and cover them with water. Cook under pressure for 5 minutes, followed by a quick pressure release. If you don't have an Instant Pot, you can use a saucepan for this stage.

2. Meanwhile, mix the marinade ingredients in a bowl, add the chicken and set aside.

3. Combine your spice mix and put half on the sliced ​​peppers and the other half on the cooked drained potatoes.

4. If you are using a two-drawer air fryer, place the peppers and potatoes on one side and the chicken on the other side. If you only have one drawer, put the vegetables first and then the chicken.

5. Fry the vegetables for 30 minutes at 180°C and the chicken for 15 minutes at 195°C. (Forget double drawer and not selecting Sync Finish, so the two trays end together!)

6. When there are 5 minutes of cooking time left, place the chopped chorizo ​​around the chicken.

7. Once the cooking time is over, place the crispy potatoes and pepper on a plate, with the chicken and chorizo ​​and scatter over the olives, tzatziki and fresh dill.
