Rack of lamb with pistachio crust

EQUIPMENT: Instant Vortex Air Fryer

INGREDIENTS:

  • 400 g rack of lamb (about 8 ribs)
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 80 g finely chopped pistachios
  • 2 tablespoons panko breadcrumbs
  • 1 teaspoon fresh rosemary, finely chopped
  • 2 teaspoons fresh thyme, finely chopped
  • 1 tbsp butter melted
  • 1 tbsp Dijon mustard

Preparation method

1. Combine pistachios, panko and spices in a bowl and drizzle with butter.

2. Pat the rack of lamb dry and press it into the nut oil mixture, turn it over and rub the spice mixture so that the lamb is well coated.

3. Select Air Fry and set the temperature to 180°C and the time to 18 minutes. Preheat the Vortex until the screen displays 'Add Food' and place the lamb in the roasting chamber. Ignore the request to turn the food over.

4. When the program has finished, check the temperature with a meat thermometer to ensure it is cooked to your liking (medium should be 54-57°C). Let it cook for another 3 minutes if you prefer it well done.

5. Remove the rack of lamb from the air fryer, cover with kitchen foil and let it rest for at least 5 minutes before serving.
