Coronation quiche in the air fryer

This coronation quiche is a light yet satisfying savoury bake made with creamy eggs, cheddar cheese, spinach, and beans, all layered into a crisp tortilla base. Inspired by classic British flavours, this easy quiche recipe works perfectly for lunch, brunch, picnics, or a simple family dinner.

Using an air fryer gives the quiche a golden finish while keeping the filling soft and creamy. The tortilla crust creates a quick alternative to pastry, making this recipe faster to prepare without sacrificing flavour or texture.

Ingredients

  • 70 ml milk
  • 120 ml double cream
  • 2 medium eggs
  • 1 tsp dried tarragon
  • 80 g cheddar cheese, grated
  • 120 g cooked spinach
  • 40 g cooked soya beans or broad beans
  • 2 flour tortillas
  • Olive oil, for brushing
  • Salt and black pepper

Preparation method

Prepare the tortilla base
Place the tortillas into a round baking tin that fits inside your air fryer basket. Using scissors, make four small cuts around the edges of each tortilla to help them fit neatly into the tin.

Lightly brush the tortillas with oil.

Pre-bake the crust
Place the tin into the air fryer and cook at 170°C for 2 minutes to lightly crisp the tortilla base.

Prepare the filling
In a mixing bowl, whisk together the milk, double cream, eggs, and dried tarragon. Season with salt and black pepper.

Roughly chop the cooked spinach and scatter it over the tortilla base. Add the beans and three-quarters of the grated cheese.

Pour the egg mixture over the filling, gently stirring if needed to evenly distribute the ingredients.

Finish by sprinkling the remaining cheese over the top.

Bake the quiche
Reduce the air fryer temperature to 145°C and cook for 30–40 minutes, until the filling is set in the centre and lightly golden on top.

Serve
Allow the quiche to rest for a few minutes before slicing. Serve warm or at room temperature with a fresh green salad.
