Baking with the Instant Pot Duo Evo Plus and the Pro!

Use the Bake function with or without pressure to let dough rise and make decadent brownies, moist banana bread, and other delicious treats.

Phase 1: Setting up the Pro for baking

  1. Place the steam rack at the bottom of the inner pot. For recipes that use Low or High pressure, add at least 250ml of water. Then place the baking dish or pan on the steam rack. Leave about 2.5 cm of space on all sides of the baking dish to allow heat to circulate evenly.

  2. Insert the inner pot into the appliance.

  3. Place and close the pressure cooker lid as described in the manual under Pressure Control Functions: Pressure Cooking Lid.

Phase 2: Baking

  1. Press Bake.

  2. When Custom flashes, turn the knob to scroll through the preset cooking options. Press the knob to select and move to the next field.

  3. When the pressure level flashes, turn the knob to switch between None, Low, and High. If you select None, turn the knob to set a custom temperature. (Also set the valve to Vent in this mode!) Press the knob to confirm your choice and move to the next field.

  4. When the time flashes, turn the knob to adjust the cooking time based on the recipe. Press the knob to confirm the change and move to the next field.

  5. Reminder flashes if you're cooking under pressure. Turn the knob to toggle ventilation reminder options. See the Control Panel section in the manual for more information.

  6. Press Start to begin. The display will show On and the cooking progress bar will display Preheat.

Phase 3: Releasing pressure

  1. When cooking is done, the display will show End.

  2. If you set a 5 or 10 minute venting reminder, the reminder timer will begin counting down.

  3. When you're ready, follow your recipe instructions to choose a venting method. See Releasing Pressure for safe venting techniques.

  4. If you baked under pressure, wait until the float valve drops, then carefully open and remove the lid as described under Pressure Control Functions: Pressure Cooking Lid.

  5. Using proper hand protection, remove the inner pot from the multicooker base and carefully lift out the baking dish or pan.
