Easy Lamb Gyros with Garlic Yoghurt Sauce and Crispy Chips
These homemade lamb gyros are packed with tender lamb, fresh vegetables, creamy garlic yoghurt sauce, and crispy chips. Inspired by classic Greek street food, they're a quick and satisfying way to turn leftover roast lamb into a flavour-packed meal.
The combination of warm flatbreads, cool yoghurt sauce, and fresh salad creates the perfect balance of textures and flavours. Best of all, everything comes together in just 15 minutes, making this an easy weeknight dinner or relaxed weekend lunch.

Ingredients
- 250 g frozen chunky chips
- 1 garlic clove
- 1 tbsp lemon juice
- ½ large cucumber
- 150 g tomatoes
- ½ small red onion
- 240 g cooked lamb, shredded or broken into chunks
- 2 g fresh mint leaves
- 125 ml full-fat Greek yoghurt
- 3 large flatbreads or pitas
- Salt and black pepper, to taste

Preparation method
Cook the chips
Place the frozen chips in the air fryer basket. Set the temperature to 195°C and cook for 10 minutes.
Prepare the garlic yoghurt sauce
Finely grate the garlic into a small bowl and stir in the lemon juice. Leave for 5 minutes while you prepare the remaining ingredients.
Thinly slice the mint leaves and stir them through the yoghurt. Add the garlic and lemon mixture and season with salt to taste.
Prepare the salad
Dice the cucumber and tomatoes into small chunks and thinly slice the red onion. Combine in a bowl and season lightly with salt.
Warm the lamb
When the air fryer has 5 minutes remaining, add the lamb to the basket alongside the chips so it warms through and develops a little colour around the edges.
Warm the flatbreads
During the final 1–2 minutes of cooking, place the flatbreads or pitas into the air fryer to warm slightly.
Assemble the gyros
Spread a generous spoonful of garlic yoghurt sauce onto each flatbread. Top with the warm lamb, cucumber, tomatoes, and red onion.
Finish with extra mint, fresh dill if using, and a little black pepper. Roll up the flatbreads and serve immediately with the crispy chips.
