Fall-Apart Crispy Clementine Pork Belly

Ingredients:

  • 1.8 kg middle cut pork belly
  • 3 clementines
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp freshly ground black pepper
  • 1 garlic clove, finely minced
  • 50 ml olive oil

Preparation Method

Prep the pork belly
Lightly score the pork skin into 0.5 cm strips, being careful not to cut into the meat. Zest the clementines into a bowl and mix with the salt, sugar, pepper, and garlic. Flip the pork belly flesh-side up and rub in the clementine seasoning.

Wrap and roast
Place the pork belly skin-side up on a large piece of foil. Fold up the sides to create a snug foil tray. Put the tray into your air fryer basket, pat the skin dry, and sprinkle with a little extra salt.
Select Roast, set the temperature to 145°C, and cook for 1 hour.

Increase the roast
After the first hour, the pork will have shrunk slightly. Pinch the foil in tighter around it, then roast again at 155°C for 30 minutes.

Crisp the crackling
Carefully remove the pork from the foil tray and place it directly onto the air fryer’s grill tray, skin-side up. Select Air Fry and cook at 205°C for 35 minutes.
Check after 20 minutes and continue until the crackling is puffed and golden.

Rest and serve
Let the pork belly rest for 5–10 minutes, then slice and serve. It’s rich, vibrant, and guaranteed to be a new favourite!
