Prawn & Bacon Salad with Zesty Lime Dressing

Fresh, light, and packed with color and flavor, this prawn and bacon salad is the ultimate quick meal for springtime. Crisp bacon, garlicky prawns, sweet corn, juicy baby tomatoes, and creamy avocado come together with a bright lime dressing to celebrate the best of the season. Perfect for an easy lunch or dinner, ready in just 20 minutes.

Ingredients

For the Salad:

  • 2 ears of corn, halved
  • 165g peeled and deveined prawns
  • 4 slices thick-cut streaky bacon
  • 2 avocados, sliced
  • 2 heads baby gem lettuce (approx. 300g), leaves separated
  • 250g baby tomatoes, halved
  • 80g Greek feta, crumbled
  • Optional: fresh oregano, for garnish

For the Zesty Lime Dressing:

  • Juice of 1 lime (at least 30ml)
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • 1 tbsp rapeseed oil
  • 1 small clove garlic, finely minced

Preparation Method

1.Cook the Corn

  • Lightly brush the corn halves with oil and sprinkle with salt.
  • Place the corn in the air fryer basket.
  • Select Air Fry at 205°C and cook for 8 minutes.

2. Prepare the Dressing

  • In a small bowl, combine the lime juice, honey, Dijon mustard, rapeseed oil, and minced garlic.
  • Whisk until smooth.
  • Spoon a little of the dressing over the prawns and set the rest aside for serving.

3. Cook the Prawns and Bacon

  • Once the corn is cooked, move it to the back of the basket.
  • Add the marinated prawns and bacon slices to the front.
  • Select Grill at 205°C and set the timer for 3 minutes.

4. Prepare the Salad

  • While the prawns and bacon cook, slice the avocados, separate the lettuce leaves, and halve the baby tomatoes.

5. Assemble the Salad

  • Once cooked, remove the prawns, bacon, and corn from the air fryer.
  • Cut the corn from the cobs and chop the bacon into bite-sized pieces.
  • Arrange the baby gem lettuce on a large serving platter.
  • Scatter over the corn kernels, halved tomatoes, chopped bacon, prawns, sliced avocado, and crumbled feta.
  • Sprinkle with fresh oregano if using.
  • Drizzle the remaining lime dressing over the salad.

Serving Suggestion
Serve immediately while the bacon and prawns are still slightly warm for the perfect contrast of textures and flavors.
