Instant Pot BBQ Chicken Nachos
- 1 cup cooked chicken shredded
- 1 cup BBQ sauce
- 30 tortilla chips
- 1 cup Cheddar cheese shredded
- 1/4 cup red onion diced
- 1 small tomato diced
- 1/2 cup sour cream
- 1/4 cup pickled jalapenos
- 1/4 cup cilantro chopped
In a bowl, combine the shredded chicken with ½ cup of the BBQ sauce and mix well.
Place a piece of aluminum foil into the air fry basket. Make sure the foil is large enough to cover the entire basket and slightly come up the sides. This will make it easy to lift the nachos out of the basket when they are done cooking.
Add the tortilla chips to the basket and spread them out in an even layer.
Top the tortilla chips with the shredded chicken and cheese.
Insert the basket into the air fryer and select AIR FRY and set the time and temperature to 350°F for 5 minutes. Press START. Check on the nachos while they are cooking, and press CANCEL when your nachos are golden brown.
Carefully lift the nachos out of the basket and place them on a serving platter.
Drizzle the remaining ½ cup of BBQ sauce over the nachos, and top with red onions, diced tomatoes, pickled jalapenos, and cilantro and serve with sour cream. Enjoy!
